Is it the first time the 777 is deployed on the YYZ route?

Indeed, first time 77W to YYZ.
The 77W flew in the past only to EWR and JFK while YYZ always was with A330-200/-300

Doesn't this mean that there are more pax flying between Belgium and Toronto, and that, if 9w ever stops at Brussels, there's hope for SN on this route?

Of course there is potential for BRU-YYZ, but I doubt SN will do it. The scenario will rather be: AC launching Toronto-Brussels, SN taking over Montreal-Brussels (which has a very large share of transfer pax to France, Africa,...).

But while I could see the Newark flight moving to AUH in the relative near future (AUH is the hub Etihad and Jet want to create, though they don't exclude a second smaller 'hub/focus-city' in Europe). But Toronto will not be easy to move to AUH because Canada and the UAE have a very restrictive bilateral agreement. I doubt there are traffic rights left for Jet to operate that route (or for Etihad to increase their services). Especially Emirates has been complaining about that a lot.

So until end of IATA summer season. Could be that they still have to finalize the winter schedules, so we might see a 'permanent' change.

It looks to me you are mixing 2 different subjects here: 9W switch to 777 and introduction of 787 by Ethiopian.
